Made popular in the U.S. by Julia Child, salade niçoise is traditionally made with raw, fresh ingredients, apart from the tuna (best canned in olive oil) and the anchovies (if you hate them, leave them out! Capers will do just fine.). Some people add potatoes, others, hard-boiled eggs. Have too many green beans, if your garden is thriving? Salade Nicoise!
Pick up some good Mediterranean olives: they’re essential! Add some tomatoes, if yours are ready. Arrange, with lettuce, on a platter. Dress with a nice vinaigrette and voila! a dinner just right in hot weather!
